I guess you decided crucifixion of the offended employee would have been a little to much.

We always provide a copy to the employee and include "I have received a copy of this"... It stops a lot of memory lapses a month later when th employee says "I didn't know anything about..."::angryface::

We send out a standard thank you for applying letter, and a thank you for interviewing letter. Feedback from both the applicants and the few we choose to interview has always been well received. We believe the $800+ annual postage is well spent.
