Wilted Southwest Salad

I'm sick of possum fumes, so it's time for another recipe featuring that perennial favorite: BACON GREASE!! Seriously, for those of you who've never experienced the southern treat of a salad wilted down with hot bacon drippings, well, you've gotta try this:

SOUTHWESTERN WILTED SALAD

1 ripe avocado
2 tsp lime juice
6 C torm salad greens
1/2 C red onion rings
3 slices bacon
1/3 C picante sauce
2 T water
1/4 tsp sugar
1/4 tso ground cumin

Cut avocado into chunks and toss with lime juice. Combine with salad greens and onion. Fry bacon until crisp; remove from skillet and crumble over salad. Add remaining ingredients to bacon drippings and bring to a boil; pour this mixture over salad, toss lightly and eat serve immediately. YUM

This is kind of a yuppie-fied version of a classic. My mom used to make wilted salad with iceberg lettuce & white onions, and hot bacon grease with a touch of vinegar for the dressing. This had to be served with fried potatoes or fried okra, pinto beans, ham, and red-eye gravy.

Okay, now I'm really depressed that I'm fixin' to eat a bowl of flaxseed cereal for dinner. x:-(
