Four Tblsp. olive oil
Salt to taste
Pepper to taste
Sprinkle flour
1/4 Cup buttermilk

A great, zesty, light breakfast; this one is really low carb and a refreshing, early morning pick-me-up.

Cut away 1/2 inch on each end of tomato and discard. Cut tomato into 1/4 inch slices.

Pour buttermilk in small saucer and mix salt, pepper and flour on small paper plate.

Add olive oil to skillet and heat to medium.

Dip each tomato slice through the buttermilk, lightly, then press into the flour, flip and do the other side. The less you coat, the fewer your carbs.

Place tomato slices in skillet and sizzle five minutes total, turning several times until golden.

Remove to paper towel, blot dry.

Drizzle a little fat-free Ranch dressing over each slice.
