Ultra Easy Taco Soup

Brown two lbs. of ground beef with one large chopped onion and one large chopped bell pepper. Then add the following regular size cans:

2 cans stewed tomatoes
1 can kidney beans
1 can of hominy OR corn
1 can pinto beans with jalapenos
1 can Rotel tomatoes
1 pkg. dry taco seasoning mix
1 pkg. dry Hidden Valley Ranch dressing mix
2 cans water

Mix it all together and simmer for one hour.

Garnish the individual servings with any or all of the following: grated cheddar cheese, chopped cilantro, chopped green onions, dollops of sour cream, crumbled tortilla chips. Great served with corn bread (or more tortilla chips).

For those folks watching carbs, this isn't too bad in the net carbs department because of all the fiber in the beans.

This makes a LOT. Sorry I didn't post it in time for the SuperBowl because it makes a great football party soup (might even have upstaged Janet's Right Breast which, as Dave Barry would say, would be a great name for a rock band.)
