I am trying to find any case law on claims by employment candidates that have sued or have made EEO claims against companies for discrimination in job offers - offering one person a signing bonus, but not the other, offering one candidate more vacation that candidate #2 etc

i don't know of any off the top of my head, but have you tried lexis/nexis or the other legal databases?

Here's one I found on the EEOC's website (http://www.eeoc.gov/litigation/appbriefs.html) I searched under "job offer".

It is mostly about pay disparity in the job offer vs perqs/signing  bonuses, etc. but I think that the plaintiff would still have to make the same type of case.
