Oreo Truffles

These are so good and SO delicious. I made some for Easter and they were a big hit.

1 Pkg of Oreo Cookies (1lb 2oz)
1 Pkg of Cream Cheese softened (8oz)
1 Pkg Chocolate Bark (8oz)

Crush the Oreo's (I use a food processor) until the consistancy of fine sand. Add the Cream Cheese and blend well. Roll the mixture into small balls.

Melt the chocolate bark slowly in the microwave (stir frequently - how long depends on your microwave.) Dip the small balls into the chocolate bark until well covered and place on wax paper or parchment paper until completely cooled. Chill for an hour and then store in a covered dish.

White chocolate bark (melted) or another thin white frosting can be dribbled across the top to add to appearance.

I got this recipe from a co-worker's wife, but there are lots of versions out on the web. It is really good. Try it!

What is bark? I don't know if I have seen that before and where would I get it?

It's just big chocolate squares, but it makes a hard chocolate coating on the ball. I had never heard of it either before this recipe. I found it with other baking goods at the grocery store. Some recipes call for regular semi-sweet chocolate squares instead. I like the bark as it makes a nice coating.

When you use bark in making candy instead of semi-sweet chocolate, you don't have to add paraffin to get the smooth, shiny coverage.

That is one of the things I love about English (or European) chocolate - they add less wax and the chocolate melts in your mouth. I put on 10 pounds every time I cross the Pond.

With all these great recipes everyone keeps posting I may never fit into any of my clothes again!
