Spinach Artichoke Dip

I feel sorry for this section of the Forum. It seems so lonely, nobody ever comes to its party. I'm hoping this recipe will help it gain more friends. I've made it several times, and although my children won't touch it ("Ewww... it has green stuff in it!") the adults always love it!


1/4 cup butter
1 clove garlic, diced
1 10 oz. bag frozen chopped spinach
1 14 oz. can artichoke hearts, diced
1 16 oz. container sour cream
1 8 oz. container cream cheese
1/4 cup grated parmesean cheese
1/4 tsp. red pepper flakes
Big bag of blue corn chips


Melt butter in sauce pan
Stir in spinach, cook until soft
Stir in artichoke hearts and garlic
Mix in sour cream and cream cheese
Once creamy, stir in parmesean cheese
Add red pepper flakes
Stir occasionally until thickened

Serve warm, with blue corn chips.
