Not quite as weird or as healthy as HRQ's Penne Pasta, but it is delicious.
2T Olive Oil
1 Large onion - diced
3-4 cloves garlic finely minced
1/4 lb. Proscuitto - chopped
1 lb. Fresh Asparagus cut in 1" pieces
Salt & pepper to taste
1 cup heavy whipping cream
Ground nutmeng to taste
2 cups grated parmesan
1 box penne pasta
Cook pasta according to box directions; set aside. Sautee onion in olive oil until soft. Add garlic and proscuitto; let simmer until garlic is soft. Stir in asparagas, salt and pepper. Let cook 5-6 minutes. Slowly add whipping cream. Add nutmeg. Cook until starts to thicken. Add pasta, stir well, continue cooking to heat through. Stir in parmesan. Serve immediately.
If you can't find proscuitto, I have used canadian bacon. You can also had mushrooms or black olives. For a spicier version add crushed red pepper flakes.
