I'd forgotten this section even exists, until all the talk about Pudloaf.
I made Meatball Soup (no pudding involved) last weekend. It is easy and yummy.
1 bag frozen italian-style meatballs
2 cans beef broth
1 can garbanzo beans
1 container fresh sliced mushrooms
1 can italian-style diced stewed tomatoes
2 cups dry brown rice
1 cup water
1 small batch fresh spinach
Put everything but the spinach in a crockpot set on high for a couple of hours, stirring now and then, until all ingredients are hot. (Meatballs take a while since they are frozen)
About 10 minutes before serving, rinse the spinach, remove stems, tear up the leaves, and mix them into the soup.
Takes about 10 minutes to prepare, and minimal cleanup. Makes awesome leftovers. My kind of food!
