Apple-Yam Casserole

[font size="1" color="#FF0000"]LAST EDITED ON 10-07-04 AT 09:12AM (CST)[/font][br][br]This recipe is great for a harvest party or Thanksgiving side dish. If you use tart apples it gives a good contrast to the yams.
Apple-Yam Casserole
1 pound uncooked yams, peeled and sliced into 1/8-inch-thick slices
2 large apples, cored and sliced
2/3 cup Apple Juice
2 tablespoons cornstarch
3 tablespoons water
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/3 cup wheat germ
Instructions:
Preheat oven to 350°F. Grease a 2-quart casserole dish. Alternately layer yams and apples in casserole dish; set aside.
In a saucepan, heat apple juice. Mix cornstarch with water in a small bowl or cup. When juice is boiling, stir in cornstarch mixture; cook, stirring, until thickened. Stir in sugar and cinnamon.
Spoon sauce over yam/apple mixture. Sprinkle wheat germ on top. Bake until the apples and yams are tender, 25 to 30 minutes.

We can find sweet potatoes in practically every grocery store. My husband favores them over white potatoes but sometimes I boil them together for dinner and make a hash the next morning with the leftovers.
