Zucchini "Zing"

6 medium zucchini
1 1/2 c soft bread crumbs
1 egg (beat it slightly)
1/2 cup cheddar cheese (finely shredded)
1/4 c chopped onion (finely chopped)
1 tbsp. fresh parsley
1/4 tsp. salt
1/8 tsp. pepper
some olive oil :-)

Wash the zucchini and trim off the ends
Boil in large pot of slightly salted water for 5 minutes.
Drain and cool
Cut a slice in the top of each zucchini- Remove the pulp, leave about a 1/4 inch of shell.
Chop the pulp, measure 2 cups of pulp and put in a bowl-Add the bread crumbs, egg, 1/4 c of cheese, onion, parsley, salt and pepper- Add a little oil olive-Mix thoroughly. Fill the zucchini shells with the pulp mixture-
Bake in a shallow pan for 20 min @ 350. Take out of oven and sprinkle top of each zucchini with the rest of the cheddar cheese-Bake another 10 minutes or until cheese has melted and it all looks golden brown x:P

You can use this as a appetizer or a main dish- A nice cold glass of Bolla wine is yummy right before, during or after!
