Wave Your Flag Cheesecake...

I made this for our 4th of July picnic and it's scrumpteous...

Wave Your Flad Cheesecake

Prep time 20 minutes plus refrigerating

1 quart strawberries, divided
1-1/2 cups boiling water
1 pkg (8-serving size) or 2 pkgs (4-serving size) jello gelatin, any red flavor
1 cup cold water plus ice cubes
1 pkg (12 oz) pound cake, cut into 10 slices
1-1/3 cups blueberries, divided
1 pkgs (8-oz each) Philadelphia cream cheese, softened
1/4 cup sugar
1 tub (8-oz) cool whip topping, thawed

Slice 1 cup strawberries and halve the remaining 3 cups strawberries (slice stem to point).
Stir boiling water into gelatin at least 2 minutes until completely dissolved. Add enough ice cubes to cold water to measure 2 cups. Add to gelatin; stir until ice is melted. Refrigerate 5 miutes or until slightly thickened (consistency of unbeaten egg whites).
Meanwhile, line 13x9 inch glass dish with cake slices. Stir sliced strawberries and 1 cup blueberries into thickened gelatin. Spoon over cake slices. Refrigerate 4 hours or until firm.
Beat cream cheese and sugar until smooth; stir in whipped topping. Spread mixture over gelatin. Arrange berries to create an American Flag (blueberries in upper left corner of dish in 8 rows of 6; strawberries in rows end to end as many rows as will fit). Makes 16 servings.
