I have never made this recipe, it was given to me by a high school classmate (since our reunion last year a bunch of us have stayed in touch through Yahoogroups). We recently got going on a recipe thread...sound familiar? Anyway this sounds wonderful and I will try it!
Serves 6-8
2 - 3 cups cooked hot white rice (not instant)
1 lg can green chiles, chopped
1 carton of sour cream (about 1½ cups)
1 16oz bag grated Monterey jack cheese
1 16 oz bag of grated cheddar cheese
In 9 x 12 casserole dish, layer first with hot rice, sour cream, ½ can of green chiles, then ½ of both cheeses, do this again topping with cheddar cheese. Bake at 350* for about 15 minutes or until cheese is bubbly. (you can also make ahead and freeze for when needed)
