Spinach and orange

I caught this last week on the radio, and it was so easy we tried it at once, and it was delicious. I didn't get exact quantities, but I punted and it was great. I used a bag of baby spinach salad mix.

orange dressing:

2-3 (I used three +) T of orange marmalade.
1 and 1/2 t vinegar ( I used rasberry wine v)
1/3 cup extra virgin olive oil whisked in.

I had some fresh oranges, so added a 1/4 cup of fresh orange juice to the dressing. I used a small can of madarin oranges, drained, and toasted about 3/4 cup of pecans to sprinkle over the top. It is so quick and easy, and so good you won't believe it. Just keep putting your finger in and adjust the marmalade/vinegar/oil until it tastes right to you.
