MARINATED ARTICHOKE HEARTS

I meant to do this before Thanksgiving, and now here it is nearly Christmas. But maybe it will be in time to help you put something new on the table for the holidays.

MARINATED ARTICHOKE HEARTS
2/3 C vinegar
2/3 C olive oil
1/4 C onion, finely chopped
2 cloves of garlic, minced
1 tsp sugar
1 tsp salt
1 tsp crushed basil
1 tsp crushed oregano
1/4 tsp pepper
Bring these ingredients to a boil. Simmer uncovered for 10 minutes. Pour this hot mixture over the following ingredients.
8 oz. fresh mushrooms (I slice them, thick)
16 oz. can carrots, drained and sliced
1 16 oz. can artichoke hearts, drained (halved or quartered works well)
1 C ripe olives, pitted and sliced
1 C celery, sliced
2 oz. jar pimentos

Make this the evening before and let the marinade work.
