Cranberry Salad & relish

Time got away from me. Here are the recipes I said I would post.

Cranberry Salad

1 pkg lemon Jell-O
1 pkg cherry Jell-O
2 cups boiling water
1 cup sugar
1 Tbsp. lemon juice
1 cup pineapple juice
1 cup raw cranberries, ground
1 seedless orange, ground
1 cup drained, crushed pineapple
1 cup chopped celery
1 cup chopped pecans

Disolve jell-o in water. Add sugar, lemon juice and pineapple juice. Chill until partially set. Add remaining ingredients. Chill until firm. Fills a regular bundt pan nicely.


Cranberry Relish

2 whole seedless oranges
1 pound raw cranberries
2 cups sugar

Process oranges and cranberries in food processor until ground. Add sugar. Mix well and chill for several hours before serving. Makes 1 quart. Is great served with poultry, ham or a pork roast.
