Carol Ann's Sweet Potato Caserole

3 C. hot cooked sweet potato chunks, peeled
1 stick butter
1 T. vanilla
1/4 C. milk
Topping:
1 C. brown sugar packed
1/3 C. melted butter
1/3 C. plain flower
1 C. Chopped pecans
In a mixer, puree peeled sweet potatoes, butter, vanilla and milk. Pour into a 2 quart buttered dish and bake at 350 for 15-20 min.
Mix topping ingredients, spread over potato mixture. Return to oven and bake 45 minutes longer.
(My mother makes it a bit different. She adds 5 oz. of orange juice and chipped pineapple to the mix. And she dots the top of the caserole with miniature marshmallows just before she takes it out of the oven, just enough to melt them and perhaps brown them slightly. Careful, they burn easily if you try this version.)
I can handle either version, just so they have it on the table on time and let the men go first.

Once, she told me I could have the leftovers. Then, while she wasn't looking, her dog licked the pan clean. I still haven't forgiven that dog.
