fajitas and lime salsa

Everytime I make this for people they just rave about how good it is, so I thought I would share it. I'm drooling just posting this.

Sour-cream Lime Salsa

½ cup soup cream
1 tsp. Lime zest
1 Tbs. Lime juice
3 Tbs. Finely chopped cilantro
2 plum tomatoes, seeded and chopped (any tomato will do)
pinch of salt

Stir together sour cream, lime zest, lime juice, cilantro, tomatoes, and salt. Pour over fajitas.

Fajitas

Ingredients:
Chicken breast strips or beef or pork
Red onion
Fresh green pepper
Garlic
Cracked black pepper
Dried red Chile pepper
Salt
Olive oil (vegetable oil is fine)
Lemon juice
Flour tortillas
Your favorite toppings: salsa, sour cream, guacamole, cheese, etc.


Salsa Especial

In a blender put in about ½ cup of oil and ½ cup of lemon juice. Add 2 cloves peeled garlic, about 2 teaspoons black pepper, 2 teaspoons salt, chile peppers to taste (adds some zing). Blend this on high speed until an emulsion is formed. Taste to see if you want more spices or lemon.

La Fajita (must use a cast iron pan)

In the medium heat pan add 2 Tbs. Oil and sliced up red onion and green pepper. Cut the onion and pepper in long thin pieces. Add as much onion as you think you will like, the pepper adds a nice flavor. Sauté with a little stirring until onions are translucent. Add meat and about 2 or 3 Tbs. Of the sauce and cook until meat is done and onions are caramelized. Add a little more sauce to deglaze the pan and serve hot and sizzling.
