Homemade Mac & Cheese

This is a family recipe and so much better than the 'boxed stuff'. I find it works well as a dinner, or a side dish for a ham steak.

1/2 to 3/4 cup of cheese (you could use more, depending on how cheesy you want it - I find the more cheese, the thicker the sauce}
**a} white american
**b} white cheddar
**c} Asiagio (just a hint for added flavor)
1 cup milk
2 tbl flour
2 tbl of butter
1/2 box of macaroni (I like the small shells the best)
{If using the full box, double the recipe}
Seasonings (to taste)


Over low heat, melt the butter, then stir in the flour. Add milk until the mixture is smooth. Bring to a boil, stirring every so often so it won't burn. (I use a whisk) The mixture should start to thicken. Add the cheese, again stirring so it won't stick to the bottom or burn. Add your favorite seasonings to taste. Some that I use are: onion powder, garlic powder, Mrs. Dash salt free blend, a smidge of celery salt and black pepper.

Pour over cooked pasta and serve HOT!
