Meat Loaf

Our A/P clerk claims meat should never be eaten "in a loaf", and even SHE liked this. She did pick out the veggies though. 
1 lb ground beef
1 box Stove Top Stuffing (any flavor)
1 cup water
1 onion, chopped
2 egg whites
1 pkg fresh mushrooms, chopped
1 bottle BBQ sauce
Preheat oven to 350
Squish everything together, except the BBQ sauce, and form into a loaf. I usually use a rectangular shaped glass baking dish but you can probably use anything oven-proof.
Cover entirely with BBQ sauce, approx 1/4 inch thick.
Bake until 160 degrees internally.
Serve with additional BBQ sauce, for those who like it extra-saucy.
To make this comfort food "extra comforting", serve it with green beans, home-made mac & cheese and rolls. (see the back of the Velveeta "brick" box for this recipe)
