My aunt made this soup from a recipe she got from a food manufacturer while we were visiting. My daughter, who hates vegetables, begged me to get the recipe.
EASY VEGETABLE SOUP (for those of us who can't cook well)
1-2 lbs. Hamburger
2 Cans Vegal
2 Cans Progresso Ministrone Soup
1 Can Ranch Style Beans
1 Can Rotel Diced Tomatoes and Peppers
1 Can Stewed Tomatoes - optional (I use a 16 oz can of tomato sauce as my husband hates tomatoes)
Brown hamburger and drain.
While the hamburger is browning, open all cans and empty them into a large pot (I use a dutch oven). Rinse cans with a little water and add that too.
Add the drained hamburger and stir well. Simmer for 1 hour.
This soup is great in the winter with cornbread. The longer it cooks, the better it tastes (I especially like it the 2nd day).
Rotel is spicy so you may want to subsitute another brand if you do not like spicy foods. I made this for family in northern California a few years ago and couldn't find Rotel in the local stores. We substituted with another brand. The family loved it, but I thought it was a little flat. ;;)
Enjoy!
