Citrus Soup

Ingredients- 2 onions,15 large garlic cloves (unpeeled),1 tbls extra-virgin olive oil,6 cups vegetable, chicken or fish stock,1 cup water,8 ripe tomatoes (diced),pinch of ground oregano,1 fresh jalapeno or serrano chili (deseeded and chopped or if you like it mas picante (hotter)like me leave in the seeds),pinch of ground cumin,1/2 tsp. each of grated lime, orange and grapefruit rind, juice of 2 limes, juice of one each orange and grapefruit,flesh of two limes,salt and pepper to taste and tortilla chips and cilantro for garnish.
1. Cut one onion is half without peeling and peel and finely chop the other.
2. Heat a large heavy based frying pan, add the unpeeled garlic and the onion halfs (face down) over medium high heat - until the onions are caramelized and the garlic soft. Set aside
3. Heat the oil in the pan and lightly saute the remaining onion until softened. Add the stock and water and bring to a boil. Reduce the heat and simmer for a few minutes.
4. Peel the charred onion and the garlic, chop coursely and add to the soup, along with the tomatoes, chili, oregano and cumin. Cook for about 15 minutes, stirring occasionally.
5. Add the citrus rind, season with salt and pepper then simmer for an additional two minutes. Remove from the heat and stir in the lime flesh and the citrus juices.
6. Ladle into soup bowls, garnish with the tortilla chips and cilantro.
