Key Lime Cheese cake-Finally

2 Cups Graham cracker crumbs
1/4 c sugar
1/2 cup melted butter or margarine
3 (8oz) packages cream cheese softened
1 1/4 cups sugar
3 large eggs
1 8 oz container sour cream
1 1/2 tsp. grated lime find
1/2 cuup Key Lime juice
strawberry halves, lime slices, lime zest for garnish
STIR together first 3 ingredients and fimly prss on bottom and 1 inch up sides of a greased 9 inch springorm pan
BAKE @ 350 for 8 minutes cool
BEAT cream cheess at medium speed with an electric mixer until fluffy, gradually add 1 1/4 cups sugar, beating until well blended. Add eggs one at a time, beating well after each addition. Stir in sour cream, rind and lime juice. Pour batter into crust
BAKE at 325 for 1 hour and 5 minutes. Turn oven off. Partially open door, let stand inoven for 15 minutes. Remove from oven and immediately run a knife around the edge of the pan, releasing sides
COOL completely in pan on a wire rack; cover and chill 8 hours. Garnish and serve with Strawberry Sauce
Strawberry Sauce: 1 1/4 cups fresh strawberries, 1/4 cup sugar 1 1/2 tsp grated lime rind: process in food process until smooth
COMMENTS: not having a springform pan, I cheat and use the ready made crusts. If you do this it will make TWO cheesecakes
If you do not have access to fresh keylimes, you can (at least around here) find it at the store. .Nellie and Joes is one brand.
I haven't done it yet, but wanted to try rasberries for the sauce
