Stipend for exempts filling in for hourly ees.

We have hourly employees who work trade shows as a part of their regular job description. The shows generally run from Wed or Thursday thru Saturday at minimum, sometimes a partial day on Sunday. These employees are paid OT for all hours worked over 40, in a Sun thru Saturday workweek. We have had a couple of exempt people fill in on an isolated basis, not part of their job description, due to hourly staff on leave. We would like to compensate them somehow without jeopardizing their exempt-status. We are considering something like "stipend" or "show premium" that would be a flat number per show day (would not apply to travel), in addition to their regular salary. We really don't want to call it a bonus, but in essence, that's what it is. We cover all meals and travel expenses. They don't have an additional vehicle at their disposal (2-3 people attend), and the days run long. Any recommendations?
