Anybody familar with tip credits?

OK, I have been looking but apparently my researching skills are not up to snuff when compared to the Forumnites here. I was wondering if someone could point me in the right direction.

Let's say a tipped employee (a server) is cut early because business was slow. The server is paid $2.25 an hour but did not make enough tips to bring s/he up to the minimum wage for that day. Legally, we (the employer) are responsible for bringing up the employee to minimum wage if not enough tips are earned. However, taking into account the server's wages and tips for the entire week, s/he more than made the minimum wage of $5.15/hr.

My question is, do we have to bring up the server minimum wage on a daily basis or make it up at the time paychecks are processed?
