Low Carb zuccini boats

6 medium sized zuccinni
3 table spoons mayonaise
4 oz of proscuitto
1/2 tsp pepper
1 tsp oregano
1/2 cup of diced mushrooms
tbsp of olive oil
6 tbsp parmesian cheese

Preheat oven to 375 degrees

Slice zuccinni in 1/2 length wise.
Scoop out interior and put in food processor along with all above except olive oil.
Process until you get a paste
Fill zuccinni skins with the paste
Sprinkle with olive oil
Bake for 25 minutes.
sprinkle with grated parmesian cheese
Broil for 5 minutes or until parmesian is golden brown.

Even my kids who hate mushrooms love this one.
