Don, my SO lets the oil cool off, strains it a bit, and puts in our chest freezer. Lasts a long time. Just did one during our recent sojourn to Phoenix International Raceway for NASCAR. They are so good!

I wouldn't think. Even in a seasoned skillet, I'd add butter to fry the ham steak. Gotta keep that cholesteral coming y'know. Hey HRGirl, in PA does the ham have more juice than AZ or MS?

As taught by my mom, I totally fry the potatoes after the boiling until crisp. My sons clamored for them all the time. And with a couple of over easy eggs on the side, it is the best - and who cares the time of day, I made it for dinner.

AnneLa, I'm glad it turned out so well. It's something I've thought of doing - unfortunately we don't have the space for all the people. No cafeteria or lunch room, and our breakroom is teeny. Second place huh? Pretty good!

You're in MS and I was in beautiful Bonita Creek, AZ! The area was destroyed by the Dude Fire in June, 1990 but has recovered nicely.

You're a brave soul, safety. I'm going to try it with 3/4 C flour and 3/4 C corn starch. I think it would make it lighter and better suited for zuchinni, mushrooms, onion rings, etc, etc.

No, Hatch chilis are pretty mild, very flavorful. But I'll stock up on the beer just in case. There was one bushel of Jabaneros being roasted - those really have a kick to them. You never know if a few might have gotten mixed up with the rest!
