Easiest Crawfish(or shrimp) Fettucini yet!

After moving to North Carolina from New Orleans, the food is the thing I miss the most! I thought I would share one of my favorite Paul Prudomme short cuts. This takes about 15 min. to make and feeds about 4-6, depending on your appetite.
Crawfish Fettucini
2 cups Heavy Whipping Cream
1 1/2 sticks of real butter
3/4 cup Grated Parmesan cheese
1 lb. Crawfish tails (Or shrimp, chicken, etc.)
1/2 cup chopped fresh Green Onions
1 tsp. Cayenne (Red) pepper
Cooked Fettucini noodles
In a large skillet melt a couple pats of butter. Add crawfish, green onions, and pepper. Saute about 5 minutes until well blended.Remove from heat and put aside. Melt remaining butter over Medium heat. Wisk in whipping cream. Continue to stir until the mixture coats a spoon evenly. Stir in parmesan cheese until smooth. Take off heat and stir in crawfish mixture. Let cool about 5 min. Return to heat, stirring constantly. When mixture is hot enough to eat, serve over pasta and..Dig in!
